José Avillez Bringing Portuguese Culinary Experiences at Mandarin Oriental Geneva

From the 15th – 18th March, Michelin-starred chef, José Avillez, is set to offer a taste of his personalised Portuguese culinary specialities at Mandarin Oriental in Geneva. The imminent arrival of the Michelin-star chef signals the revival of themed menu’s at the hotel’s Café Calla restaurant. In store for guests is Chef Avillez’s fine gourmet cuisines freshly prepared and served at legendary hotel whilst you enjoy luxurious stay at the hotel and experience Geneva’s other delights; chocolatiers anyone?

Recognised as one of Portugal’s finest chefs and a true ambassador of Portuguese cuisines, José Avillez joins Café Calla from Lisbon, where he runs six restaurants, including Belcanto, the first Portuguese restaurant to be awarded two Michelin Stars, and named Best International Restaurant 2016 by Condé Nast Traveller. Avillez creates culinary experience from fine dining to pizza, traditional café to gourmet take-out, dishes and flavours that have revolutionized Portugal’s restaurant scene. Recreating traditional dishes with reverence and ingenuity, the internationally celebrated chef will bring into the Mandarin a distinctly timeless Portuguese fine-dining experience.

Chef Avillez menu at Café Calla will feature mothering dishes of the likes of Avocado in tempura, Tuna cone, Algarve prawns in ceviche and Portuguese “pot-au-feu”. Other delicacies include “Dip in the sea”, which is a seabass poached in seaweed-infused broth. Deserts are made light and refreshing with lively names such as “Tangerina by Avillez”, a glowing orange ball of frozen mandarin juice filled with mandarin foam, and served with mandarin sorbet on cep sand.

To supplement José Avillez’s cuisine, Mandarin Oriental, Geneva’s Chef Sommelier recommends a 10-year old medium sweet Madeira wine, D’Oliveiras, which subtly imbues power and softness. A selection of beautiful Portuguese terroirs will be served too.
